Aanraku has all sorts of heights when it comes to grinding, cutting, and soldering...as well as some very short stools for those of us that are...hmmm...vertically challenged....I don't want to bend too much when I am grinding, and I want to be able to lean into my cutting, and for soldering I want to be up higher. So, if possible, if you can accomodate different heights, then make different work surface heights and you will be so much more comfortable.
Being a bit on the short side, my center island in my kitchen is about 2 inches shorter than most "standard" heights, making it more comfy to slice and dice for me. I use the same height for cutting glass. I like to be much higher when soldering, because I hate to get a backache from the constant bending over while soldering.
I figured out the heights originally with a table that I bought from Costco that went "up" in 2" increments.
Yes, I also use a good heavy mat for my feet!
