If you want advice about comfort....ask a LAZY person. That would be me most of the time.
Mats are good, but if you STAND constantly while doing everything, there's little hope for you. I use a high workbench while cutting but a low, sitting-height bench for grinding and a lot of the foiling, fitting and soldering. It's even possible to sit and cut small pieces. How much you can do while sitting depends on the size of the project and the working area of your bench. I even use the Taurus 3 saw while sitting. It's important that you are able to put your feet on the floor while sitting. If they dangle from a high stool or constantly need to be searching for a roost on the rungs, you can actually do more damage than if you stand.
It's always better to break up the work so you aren't always insulting your knees and feet. There's a good mix of standing, walking and sitting while doing glass to help with that.
