You can open the kiln and take a quick peek any time it is over 1000F. Whether you can just switch the kiln off and let it cool depends on the kiln. I would go through the annealing process if I were you. For a single layer if you know your kiln cools VERY slowly, you might get away with just letting it cool, but I wouldn't do it unless you have already tracked the cooling temperatures of your kiln over time and know that it is slow enough. (And I don't really know what "slow enough" is.)
